caprese pasta sauce - easy peasy, quick and easy

This is my take on classic Caprese sauce. When you come home from work late, or just don't feel like cooking a big meal, this really hits the spot. My family loves when I cook this dish. I hope your family enjoys it too.

Ingredients For caprese pasta sauce - easy peasy, quick and easy

    oz. box of thin spaghetti
  • 8
    oz. mozzerella cheese, cut in small cubes
  • 3
    tbsp. oil
  • 1
    tsp. garlic powder, more or less depending on taste
  • 1
    tsp. italian seasoning
  • 1/2
    tsp. salt, or to taste
  • 1/2
    tsp. crushed red pepper flakes
  • 1
    28 oz. can of petite diced tomatoes, with juices
  • 1/2
    cup white wine
  • 1-1/2
    cups sliced black olives

How To Make caprese pasta sauce - easy peasy, quick and easy

    Cook pasta to desired consistency, reserving 1 cup of the water for later, if needed.

    In a large saucepan, combine all ingredients except cubed Mozzerella cheese. Simmer for 5 to 10 minutes.

    Drain pasta, mix in sauce, and add Mozzerella cubes. Stir and mix well. Serve immediately. Use pasta water if too dry, but I doubt it will be.
