This is one of my favorite “I don't know what I want to fix” quick dishes when company drops by. A real family favorite, and it can be made in 30 minutes! I first made it with shrimp, but chicken, pork, and fish are good, too. It is good without meat, and it makes a great side dish for most entrees. I have a Fasta Pasta maker for the microwave, and I give that thing a workout making this recipe. I love the way it makes spaghetti for this meal in 15 minutes. No waiting for a pot to boil. So if you have a Fasta Pasta maker gathering dust, use it! Enjoy!

Ingredients For bonnie's shrimp with lemon noodles

  • 1/2
    pound spaghetti
  • water
    for boiling on the stove, or use fasta pasta maker
  • 1
    teaspoon salt in the water
  • zest
    from one large lemon
  • juice
    from one large lemon
  • 1/2
    stick of butter, melted in large skillet
  • 2
    tablespoons chopped chives divided
  • 2
    cups cooked frozen shrimp with tails on or off
  • 2
    tablespoons fresh grated parmesan cheese for each serving
  • Season
    with salt and pepper at the table

How To Make bonnie's shrimp with lemon noodles

    Use extra-large frozen cooked shrimp or fresh cooked. Place about two cups or more of the frozen shrimp in warm water in a bowl and rinse the shrimp. Drain and add more warm water to the shrimp. Set aside.

    Cook noodles in a Fasta Pasta maker or boil the spaghetti in water on the stove according to package directions. Either way you choose, don't drain the pasta!

    I use organic spaghetti. Get the spaghetti started cooking first. I cook mine in the microwave. Fill the Fasta Pasta container up to the top measuring line with cold water, add a little salt. Set the timer and microwave spaghetti for 15 minutes.

    I use my Fasta Pasta maker because it makes perfectly cooked spaghetti in 15 minutes and measures four servings with no guess work.

    While your spaghetti is cooking, you can prep the rest of the ingredients. Cut the stick of butter in half. Melt butter in a large skillet.

    Zest the lemon, first, and then, juice the lemon. Set aside.

    When the spaghetti is done, add it to the hot butter in the skillet with a spaghetti spoon or use tongs. Let some of the water mix in with the spaghetti as you transfer the noodles to the skillet. A little of that water will help make a light sauce for the cooked noodles.

    Add the lemon and zest to the skillet. Toss gently with the tongs until all the spaghetti is coated with the sauce.

    Add 1 tablespoon of chives and toss again.

    Now, drain the shrimp and gently mix them with the noodles until they are hot. Add the remaining one tablespoon chives and toss. It is ready!

    Salt and pepper at the table if desired. Serve immediately.

    Your Options: You will love the versatility of this dish! It is great as is. But you can make it your own. Before serving, you may add a little fresh grated Parmesan cheese, parsley, mushrooms, chopped tomatoes, chives, green onions, anything you might want to try. We are adding cooked shrimp to this dish.
  • Cook's Tip!

    Parmesan cheese from a jar, doesn't work well in this recipe. Adding fresh grated Parmesan to the top of the finished dish works fine. Also be aware that tossing the fresh Parmesan in with the hot noodles instead of sprinkling it on top will cause the noodles to stick together.
