This is a versatile Asian noodle side dish or main meal that works well with most meat or poultry. Change up the vegetables and the noodles to suit your taste. It has lots of flavor, and the dish is also very easy to prepare with ingredients that are found in most pantries. Enjoy!

Ingredients For bonnie's noodles

  • VEGETABLES
  • 2 large carrots, cut into thick strips
  • ½ red onion sliced
  • 1 can (4 oz.) sliced shiitake mushrooms, drained
  • 2 large cloves of fresh garlic sliced
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil (reserve 1 tablespoon)
  • ½ pkg (8 oz.) spaghetti cooked, and well drained
  • SAUCE
  • 2 tablespoons marin
  • 1 tablespoon soy sauce
  • 1 tablespoon tamari sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon frank's hot sauce
  • 2 ½ tablespoons brown sugar
  • OPTIONS
  • green onions, or ½ cup celery, or 1 cup chopped napa cabbage.

How To Make bonnie's noodles

  • Boil water and cook spaghetti.

    Boil water and cook the spaghetti. Drain well. Blot with paper towel to pick up excess moisture.
  • Slice carrots into thick slices

    Prepare Vegetables. Peel and cut the carrots in half. Large, fat carrots work best in this recipe. Then cut each half into thick strips with a sharp knife.

  • SAUCE INGREDIENTS:
2 tablespoons marin
1 tablespoon soy sauce
1 tablespoon tamari sauce
1 tablespoon sesame oil
1 tablespoon frank's hot sauce
2 ½ tablespoons brown sugar

    Make sauce. In a small bowl, add all the sauce ingredients and whisk to combine.
  • Cook carrots.

    Cook Vegetables. Heat large skillet over med high heat with 1 tablespoon vegetable oil and 1 tablespoon sesame oil. Add the carrots and brown on both sides then add the rest of the vegetables, and cook until crisp tender. (Add optional veggies, if any) Add mushrooms last and toss them. Remove vegetables to a bowl. Keep warm.
  • Lightly brown the noodles.

    Cook Noodles. Add the 1 tablespoon of reserved vegetable oil to the skillet over medium high heat. Add the cooked spaghetti noodles. They will lightly brown, then turn and lightly brown the other side (about 3 minutes total)

    Add Sauce to the spaghetti, toss with tongs to coat completely.
