8 ozspaghetti

1/2 lbbacon, diced

2 Tbspstore bought tomato pesto

1 Tbspminced garlic

1/2 cchopped sun dried tomatoes in oil

1 1/2 lbpeeled prawns, tails intact

1 - 1.5 cevaporated milk or light pouring cream

2 cwell packed baby spinach, washed

1 Tbspbutter, salted

chili flakes, to garnish, optional

grated Parmesan cheese, to garnish, optional

1Boil water and get the spaghetti cooking - this sauce won't take long.

2In a deep skillet, cook the bacon to your liking. Add the pesto, garlic and sun dried tomatoes. Cook until fragrant. Add the prawns and milk/cream and cook until the prawns are cooked through. Add the spinach and turn off the heat to wilt. Add the butter and allow to melt; stir through.

3Pour the sauce over the cooked spaghetti and top with a little chili flakes and/or Parmesan.
