I was looking for a macaroni and cheese that had some kick. Once I made this my children would not go back to ordinary mac and cheese, and they are really picky. It really is important to let the milk stand for 20 min. as less time will not let the spices enhance the flavor.

Ingredients For bernie's mac and cheese

  • 3 c
    milk
  • 1
    onion chopped
  • 1
    bay leaf
  • 1 tsp
    parsley flakes
  • 3/4 tsp
    oregano, dried
  • 1 Tbsp
    paper corns
  • 11 tsp
    butter
  • 11 tsp
    flour
  • 12 oz
    dry macaroni cooked
  • 32 oz
    cheddar cheese, shreeded

How To Make bernie's mac and cheese

    In a saucepan combine milk, onion, and spices. Heat just until bubbles begin to from around edges. Remove from heat, and let stand for 20 min. Pour milk through strainer into bowl, set aside. Throw away the onions and spices.

    Melt margarine in a separate pan, stir in flour. Mix until bubbly. Stir in milk and continue to cook until thick. Remove from heat and add cheese. Stir until melted an smooth. Fold in cooked marcaroni, pour into a buttered 2 qt. casserole dish. bake 350 f. for 25-30 min. until bubbly and browned around the edges.
