This is a Maltese recipe. I've written goat cheese into the ingredient list, but if you can find the traditional gbejna cheese then go for that! This can be made entirely vegetarian if you use veggie stock.

1/2 lbgreen beans

8 ozshort pasta of your choice

1 qtvegetable or chicken stock

2 Tbspolive oil

1 lgonion, diced

2 clovegarlic, mined

1bay leaf

1 tspdried oregano

6 ozred wine

2 Tbsptomato puree
-
12 ozchopped fresh or canned tomatoes

salt and pepper, to taste

grated goat cheese,to taste (or gbejna if you can find it!)

parsley, to garnish
How To Make baked pasta with beans and tomatoes

1In a large pot, combine the beans, stock, oil, onion, herbs, wine, tomatoes, and tomato puree and stir well to combine. Put the pot over a medium heat and bring the mixture to a boil. Turn your burner down to low and simmer for about 45 minutes.

2Meanwhile, preheat your oven to 400 degrees F. In a separate large pot, bring salted water to a boil and cook your pasta as per the package directions. Drain and set aside.

3Once the sauce is done, add the pasta to it and mix well to combine. Pour this mixture into a greased 9 x 13-inch pan and sprinkle the goat cheese and parsley on top.

4Bake for approximately 25 min. and enjoy!
