Ingredients For angel hair pasta with ricotta & lemon zest

    angel hair pasta
  • 1 md
    shallot, chopped
  • 1/2 c
    butter
  • 1 Tbsp
    dried tarragon
  • 2 Tbsp
    lemon juice
  • 1 c
    ricotta cheese
  • salt and pepper
  • lemon zest, for garnish

How To Make angel hair pasta with ricotta & lemon zest

    Add the pasta to salted boiling water. Cook about 10 to 15 minutes. Meanwhile, add the shallots, butter, tarragon, lemon juice, and ricotta cheese into a food processor and process until smooth.

    Drain the pasta, reserving 1/4 cup pasta water. Add the pasta back to the pot and stir in the cheese mixture with the pasta water. Season with salt and pepper to taste. Serve with lemon zest on top.
