Ingredients For angel hair pasta with colatura

1 lbangel hair pasta

1/4 cpanko bread crumbs

1 Tbspplus 1/4 cup olive oil, divided

1/4 ccolatura
-
2 clovegarlic, minced
-
1/4 cchopped Italian parsley

2 tspgrated lemon zest

salt and pepper, to taste
How To Make angel hair pasta with colatura

1Cook the angel hair in salted boiling water. In a small skillet, add the Panko and 1 Tbsp olive oil and cook until browned. Set aside.

2In a large bowl, add the colatura and garlic. Drizzle in the remaining olive oil, whisking the whole time. Add 2 Tbsp of pasta water. Keep whisking to make a sauce. Add 1/2 cup pasta water and parsley and whisk some more. Drain the pasta. Add the pasta to the bowl and toss to coat the pasta with the sauce.

3Stir in the breadcrumbs and lemon zest. Taste to adjust for salt and pepper.
