almond spaghetti

I don't usually eat meat in my spaghetti; I prefer vegetables. I was looking for a filling spaghetti with a meat alternative that had a lower fat protein & I came up with this today. The almonds give a nice crunch & light flavor to the spaghetti. I didn't get pictures for each step on this one, but when I cook it again, I will. :)

Ingredients For almond spaghetti
-
1-2 Tbspwater, chicken stock, butter or olive oil
-
1 mdonion
-
2-3 lggarlic cloves
-
3 mdfresh tomatoes
-
2 can7 oz each of tomato sauce
-
2 Tbspitalian seasoning
-
1 Tbspgarlic powder
-
1 tspsalt
-
1/2 tsppepper
-
1/2 tsporegano
-
3 smbay leaves
-
1-2handfuls of natural, whole almonds; chopped & toasted
-
6 ozspaghetti pasta (for gf, use gf pasta)
-
1 tspolive oil
-
dash/ pinchsalt
How To Make almond spaghetti
-
1Place a large pot of water on low, to start heating (for the pasta)

2Chop onion & garlic
-
3In skillet, place butter/oil/stock/water & saute onions & garlic until translucent, about 5 or 6 minutes

4Stir occasionally so they don't stick/burn
-
5Meanwhile, chop tomatoes into large dice

6Open tomato sauce cans & set aside
-
7Once onions & garlic are translucent; add chopped tomatoes
-
8Cook tomatoes, stirring occasionally, until cooked through & moisture has mostly evaporated, on low to medium-low heat (approximately 5-10 minutes)

9While tomatoes are cooking, toast almonds (if not already done); remove from pan & set aside

10Turn pasta water up to medium - medium high heat to bring to a rolling boil

11Add tomato sauce

12Add Italian seasoning, garlic powder, salt, pepper, oregano; mix in well
-
13Add bay leaves
-
14Simmer sauce 10 minutes, stirring so it doesn't stick/burn

15When pasta water is boiling; add salt & olive oil; stir once
-
16Add pasta (I usually break my spaghetti in half before adding to water, for smaller pieces)

17boil pasta to desired doneness (7-10 minutes)

18Drain pasta & mix with sauce

19When serving, sprinkle toasted almonds on top of spaghetti to serve (1-2 tbsp per person, depending on how much you toasted)
