almond spaghetti

I don't usually eat meat in my spaghetti; I prefer vegetables. I was looking for a filling spaghetti with a meat alternative that had a lower fat protein & I came up with this today. The almonds give a nice crunch & light flavor to the spaghetti. I didn't get pictures for each step on this one, but when I cook it again, I will. :)

Ingredients For almond spaghetti

  • 1-2 Tbsp
    water, chicken stock, butter or olive oil
  • 1 md
    onion
  • 2-3 lg
    garlic cloves
  • 3 md
    fresh tomatoes
  • 2 can
    7 oz each of tomato sauce
  • 2 Tbsp
    italian seasoning
  • 1 Tbsp
    garlic powder
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/2 tsp
    oregano
  • 3 sm
    bay leaves
  • 1-2
    handfuls of natural, whole almonds; chopped & toasted
  • 6 oz
    spaghetti pasta (for gf, use gf pasta)
  • 1 tsp
    olive oil
  • dash/ pinch
    salt

How To Make almond spaghetti

    Place a large pot of water on low, to start heating (for the pasta)

    Chop onion & garlic
  • 3
    In skillet, place butter/oil/stock/water & saute onions & garlic until translucent, about 5 or 6 minutes

    Stir occasionally so they don't stick/burn

    Meanwhile, chop tomatoes into large dice
  • 6
    Open tomato sauce cans & set aside
  • 7
    Once onions & garlic are translucent; add chopped tomatoes
  • 8
    Cook tomatoes, stirring occasionally, until cooked through & moisture has mostly evaporated, on low to medium-low heat (approximately 5-10 minutes)

    While tomatoes are cooking, toast almonds (if not already done); remove from pan & set aside

    Turn pasta water up to medium - medium high heat to bring to a rolling boil

    Add tomato sauce
  • 12
    Add Italian seasoning, garlic powder, salt, pepper, oregano; mix in well

    Add bay leaves

    Simmer sauce 10 minutes, stirring so it doesn't stick/burn

    When pasta water is boiling; add salt & olive oil; stir once

    Add pasta (I usually break my spaghetti in half before adding to water, for smaller pieces)

    boil pasta to desired doneness (7-10 minutes)

    Drain pasta & mix with sauce

    When serving, sprinkle toasted almonds on top of spaghetti to serve (1-2 tbsp per person, depending on how much you toasted)
