Ingredients For 3 cheese linguine w shrimp, artichokes, & spinach

12 ozlinguine

4 Tbspolive oil

1 mdonion, diced

8 ozfresh mushrooms, sliced

6 clovegarlic, minced

10 bunchfresh spinach
-
1 jarartichoke hearts (14 oz), drained and chopped

3/4 cheavy cream
-
16raw shrimp, peeled and deveined
-
2 cricotta cheese
-
2 cgrated Parmesan cheese
-
1 cshredded mozzarella cheese
-
salt and pepper
-
basil or parsley, chopped, for garnish
How To Make 3 cheese linguine w shrimp, artichokes, & spinach

1Boil salted water and add the linguine to cook. In a large saucepan, add the olive oil. Add the onion and mushrooms. Cook for about 6 minutes. Add the garlic and cook 1 more minute.

2Add the spinach and artichokes, letting the spinach wilt and shrink. Add the heavy cream and shrimp. Add a ladle of the pasta water to the pan, then drain the pasta.

3Stir in the cheeses and cook until melted. Stir in the linguine and serve.
