Ingredients For 3 cheese linguine w shrimp, artichokes, & spinach

  • 12 oz
    linguine
  • 4 Tbsp
    olive oil
  • 1 md
    onion, diced
  • 8 oz
    fresh mushrooms, sliced
  • 6 clove
    garlic, minced
  • 10 bunch
    fresh spinach
  • 1 jar
    artichoke hearts (14 oz), drained and chopped
  • 3/4 c
    heavy cream
  • 16
    raw shrimp, peeled and deveined
  • 2 c
    ricotta cheese
  • 2 c
    grated Parmesan cheese
  • 1 c
    shredded mozzarella cheese
  • salt and pepper
  • basil or parsley, chopped, for garnish

How To Make 3 cheese linguine w shrimp, artichokes, & spinach

    Boil salted water and add the linguine to cook. In a large saucepan, add the olive oil. Add the onion and mushrooms. Cook for about 6 minutes. Add the garlic and cook 1 more minute.

    Add the spinach and artichokes, letting the spinach wilt and shrink. Add the heavy cream and shrimp. Add a ladle of the pasta water to the pan, then drain the pasta.

    Stir in the cheeses and cook until melted. Stir in the linguine and serve.
