zucchini quiche

My DH hates zucchini and loves this..he loves cheese so all I had to do was cover it in cheese.... Similar to my veggie pie but this is nice as a luncheon although a little more work. * not my pic

Ingredients For zucchini quiche

1 cww flour

1 call purpose flour

1/2 cbutter
- FILLING

1red onion, hinly sliced

2 Tbspolive oil

2 lgzucchini, sliced

6 ozcheese any kind grated...a hard goats cheese is excellent in this

2 Tbspchopped fresh basil

3eggs , beaten
-
1 1/4 cmilk

How To Make zucchini quiche

1Preheat oven to 400 degrees. Mix the flours together and rub in butter till it resmebles crumbs. Add enough cold water to form a good firm dough. Do it a bit at a time till it holds together. (If you prefer not to do this you can buy a store bought crust but remove it from its foil pan and fit it into a 9 inch flan pan.) Roll out pastry and fit into pan, prick and chill for 30 mins.Blind cook the crust for 20 mins and uncover for the last 5 to crisp up.Set aside, Saute the onuonsin oil in fry pan for 5 mins. Add the zucchini and fry another 5 mins. spoon the onion/zucchini mixture into shell, Scatter over top most of the cheese and all of the basil.. Beat together the eggs, milk and seasoning and pour over the filling. Top with remaining cheese.Turn oven down to 350 and bake for about 40 mins until firm to the touch in the centre.Cool 5 mins before cutting and serving
