I created this last year when I had a huge Zucchini harvest..It turned out really awesome and i'll be making it again this year for sure!!!

Ingredients For zucchini harvest crumble

  • 6-8
    zucchini thinly sliced
  • 1/2 c
    chopped onions
  • 2
    medium tomatoes sliced
  • 2 c
    shredded cheddar
  • 2 c
    croutons, garlic
  • 1 can
    chicken broth
  • pinch
    salt and pepper

How To Make zucchini harvest crumble

  • 1
    grease a large casserole dish, layer zucchini,tomatoes, onions, cheese then croutons and repeat layers, sprinkle with salt and pepper as much as you like between layers, pour half the can of chicken broth over the casserole, save the rest in case you like it more moist, bake at 400 for 30 mins, cover with foil till the last 10 mins, sprinkle with more cheese if you like..I like to sprinkle grated parmesan on mine.
