yummy gochujang noodles
This is a family favorite, and having a family of 7(now 9) its hard to find something that we all can agree on. This is for sure one of these. This is packed full of flavor and protein. I do try and use low sodium where I can. Another thing I do is use brown rice and millet ramen if I can find it. This is also a beautiful dish to present.

Ingredients For yummy gochujang noodles
- SAUCE

3 Tbspsoy sauce, low sodium

2-3 Tbspgochujang sauce

2 Tbsptomato paste

2 Tbsppeanut butter

2 Tbspwater

2 Tbspbrown sugar

1 cloveminced garlic

1 cchicken broth
- RAMEN

1 lbground chicken
-
1/2 tspsalt

1/2 tspground pepper

2 pkgrice ramen or stir fry noodles

1-2 cups cfresh spinach
-
1/4 cscallions
-
1 Tbspchili oil for finishing

1 Tbspsesame seeds for finishing
How To Make yummy gochujang noodles

1Whisk the sauce ingredients (except the extra broth) in a small bowl or shake together in a jar. It should form a thick sauce.

2Cook the chicken in a large skillet over medium high heat. Season generously with salt and pepper.

3Boil the noodles for just a few minutes to soften. Drain and set aside.

4When the chicken is done, add spinach, cooked noodles, and sauce to the pan, keeping it over medium high heat. Toss to combine; heat until the spinach is wilted. Add extra water or broth to thin the sauce, a little at a time, to get the sauciness that you like (I usually add about 1 1/2 cups total).

5Serve topped with fresh herbs, scallions, chili oil, sesame seeds, and whatever else you like.
