  • CAULIFLOWER
  • 8 c
    water
  • 3 Tbsp
    kosher salt
  • 6 clove
    garlic
  • 1/4 c
    butter
  • 1 Tbsp
    sugar

    whole black peppercorns

    head of cauliflower
  • olive oil, for drizzling
  • 1
    lemon, juiced
  • smoked paprika
  • CHEDDAR BEER SAUCE
  • 2 Tbsp
    butter
  • 2 Tbsp
    flour
  • 1/2 c
    heavy cream
  • 1 c
    beer (your favorite brand - taste will be different depending on beer chosen. I used Coors Lite)
  • 1 Tbsp
    Worcestershire sauce
  • 1 Tbsp
    whole grain mustard (I used Dirty Bastard brand)
  • 2 1/2 c
    freshly shredded sharp cheddar cheese
  • salt and pepper, to taste

How To Make whole roasted cauliflower with cheddar beer sauce

    Place the water in a large pot. Add the salt, garlic cloves, butter, sugar, black peppercorns and bay leaves. Bring the water to a rolling boil. Trim the cauliflower greens stems and keep the stem intact. Lower the cauliflower head down in the boiling water, reduce the heat, and simmer for 20 minutes, flipping the head half way through. Drain in a colander.

    Preheat the oven to 450 degrees F. Place the head of cauliflower in a baking dish. Drizzle the olive oil over the head. Squeeze the lemon juice over it. Sprinkle with smoked paprika. Roast in oven for about 30 minutes until a knife goes through easily but it's still intact.

    Meanwhile make the sauce. Add the butter to a saute pan. Add the flour and whisk until it starts to turn light brown. Add the heavy cream then the beer. Whisk until thick. Add the Worcestershire sauce and mustard. Whisk again until well incorporated.

    Remove from heat and add the shredded cheese. Stir until the cheese is melted and the sauce is smooth.

    Pour the cheese sauce onto a plate or into a low bowl. Remove the cauliflower and set into the cheese sauce. Cut into steaks and spoon the sauce over top to serve.
