These are really good. The sauce is rich and flavorful. You can make the white bean "meat"balls ahead of time and just throw everything together when it's time to cook dinner.

Ingredients For white bean "meat"balls with onion-wine sauce
- WHITE BEAN "MEAT"BALLS

2 canwhite beans, rinsed and drained

2/3 cplain breadcrumbs

2 lgeggs

1 smonion, minced
-
1 clovegarlic, minced
-
2 Tbspfresh chopped parsley
-
1 tspground cumin
-
3/4 tspsalt
-
ground black pepper, to taste

1/4 cextra virgin olive oil
- ONION-WINE SAUCE
-
1 smonion, finely chopped
-
4 clovegarlic, minced
-
2 Tbspall purpose flour
-
1 tspdried thyme
-
3/4 cdry white wine
-
1 1/2 cvegetable broth
-
fresh chopped parsley, to garnish
How To Make white bean "meat"balls with onion-wine sauce

1Add the white beans into a food processor. Blitz until well mashed then pour into a mixing bowl.

2Add in breadcrumbs, eggs, onion, garlic, parsley, cumin, salt, and pepper. Combine with hands or wooden spoon until well mixed together into a paste like texture.

3Shape into tightly packed balls.

4Heat olive oil in a nonstick pan and brown meatballs evenly on all sides. Remove to a plate; keep warm.

5To make the sauce, add the onions to pan drippings over medium heat and start to cook. When onions are translucent and starting to brown, add in garlic.

6When the onions are starting to brown, add flour and cook about 2 minutes.

7Add in white wine, thyme, and salt and pepper to taste. Stir around to mix. Reduce heat to simmer and reduce about 6 minutes. Add vegetable broth. Cook 6 minutes more or until you end up with a slightly creamy sauce.

8Add meatballs back into pan in a single layer. Cook 2-3 minutes longer, or until the meatballs are incorporated and heated through.

9Remove from heat. To plate: transfer some of the meatballs onto a plate and ladle some sauce over the top. Garnish with fresh parsley.

10Serve with rice, roasted potatoes or just some crusty bread and a fresh green vegetable!
