2 Tbspunsalted butter

2 Tbspolive oil

1 mdred onion

4 clovegarlic

4 Tbspdark brown sugar

3 cdry red wine

4 Tbspred wine vinegar

4 Tbsptomato paste

4 cbeef stock
-
cayenne pepper
-
chili powder
-
1chipotle in adobe sauce

2 lbvenison stew meat

2 cblack beans
-
sour cream
-
shredded cheese
-
fresh cilantro
How To Make venison chili

1Melt butter and olive oil in large pot over medium heat. Stir in chopped onion and minced garlic.

2Stir in brown sugar, red wine, vinegar, tomato paste, stock, chipotle & spices to taste. Simmer 30 minutes until mixture is reduced by half.

3Meanwhile heat oil over medium high heat and brown stew meat. Stir in black beans. Transfer mixture to the simmering pot, mixing everything thoroughly. Simmer 1 hour until meat is tender. Garnish with fresh cilantro, sour cream and shredded cheese.
