Vegetarian Sloppy Joes. One more recipe which was given to me by a friend. These are good, healthy, and easy to make. You won't miss the meat. If you can't find tempeh you can substitute firm tofu. Tempeh is more firm and meaty but otherwise very similar to tofu.

Ingredients For veggie joe sandwiches (for the crockpot)

1 lgonion, diced

1green bell pepper, diced

4 clovegarlic, minced

2carrots, shredded

1 pkg(8 ounces) tempeh (substitute firm tofu if necessary), diced

2 Tbspolive oil

1envelope dry onion soup mix

1/4 tspcumin

1 can(16 ounces) canned pinto beans, drained and mashed

1 can(16 ounces) canned refried beans, fat free

1/2 cbbq sauce
How To Make veggie joe sandwiches (for the crockpot)

1Briefly saute onion, bell pepper, garlic, carrots, and tempeh in olive oil. Combine all ingredients in slow coker. Cook on low for 4-5 hours. Serve hot on whole wheat buns.
