It's a bit like a BLT... with peanut butter, which was a huge thing in my house growing up. Non-vegetarians even love this one!

Ingredients For vegetarian sun-dried tomato, peanut butter, and tofu sandwich

2 slicewhole grain bread, lightly toasted

3 slicetofu, firm (about 1/4 inch deep)

3sun-dried tomatoes, diced

3lettuce leaves

2 Tbspmayonnaise

2 Tbsppeanut butter

salt and pepper
How To Make vegetarian sun-dried tomato, peanut butter, and tofu sandwich

1Lightly brown the tofu slices in a frying pan, or microwave with butter for 2 minutes. Salt and pepper to taste.

2Spread peanut butter on toasted bread while still warm, sprinkling sun-dried tomato slices to melt in.

3Next, place buttered and seasoned salt and pepper on sandwich, followed by lettuce and final toast slice smeared with mayonnaise.
