This is a tastey and energy giving sandwich. I have enjoyed it on hot or cold days. The Feta cheese is the clincher for flavor. Enjoy!!

Ingredients For vegetarian island sandwich

  • 1
    chabatta bread or bread of your choice
  • 1
    tomato, crushed with garlic and basil added to taste
  • 1
    red onion, sliced side to side to taste
  • 1 can
    black olives to taste
  • 1 oz
    spinach leaves, fresh
  • feta cheese to taste
  • 1 can
    sliced mushrooms
  • banana peppers, optional
  • red peppers, optional

How To Make vegetarian island sandwich

  • 1
    Slice the bread the long way. Making sure to get the bread as even as possible. As you build the sandwich, this will make it easier to transfer to the oven, if you desire it hot.

    On the bottom slice add: tomatos crushed (this has to be added first and then the rest in any order), sliced red onions, black olives, mushrooms, spinach leaves, and peppers to taste. Use as much as your taste buds tell you to use.

    On the top add the Feta Cheese to taste.

    Leave sandwich open when you place it in a 350 degree oven for about 5 minutes or until toasted. The Feta cheese will not melt. Becareful when you remove the sandwich as the crust does get hot. Add the top to the bottom and chow down.

    This is a wonderfully warm and crunchy toasted sandwich if you like it warm. You could add other flavors to the mix like, olive oil, vinegar, or any other vegy that you like. Enjoy!!
