This is a tastey and energy giving sandwich. I have enjoyed it on hot or cold days. The Feta cheese is the clincher for flavor. Enjoy!!

Ingredients For vegetarian island sandwich

1chabatta bread or bread of your choice

1tomato, crushed with garlic and basil added to taste

1red onion, sliced side to side to taste

1 canblack olives to taste

1 ozspinach leaves, fresh

feta cheese to taste

1 cansliced mushrooms

banana peppers, optional

red peppers, optional
How To Make vegetarian island sandwich

1Slice the bread the long way. Making sure to get the bread as even as possible. As you build the sandwich, this will make it easier to transfer to the oven, if you desire it hot.

2On the bottom slice add: tomatos crushed (this has to be added first and then the rest in any order), sliced red onions, black olives, mushrooms, spinach leaves, and peppers to taste. Use as much as your taste buds tell you to use.

3On the top add the Feta Cheese to taste.

4Leave sandwich open when you place it in a 350 degree oven for about 5 minutes or until toasted. The Feta cheese will not melt. Becareful when you remove the sandwich as the crust does get hot. Add the top to the bottom and chow down.

5This is a wonderfully warm and crunchy toasted sandwich if you like it warm. You could add other flavors to the mix like, olive oil, vinegar, or any other vegy that you like. Enjoy!!
