Ingredients For vegan goulash

2 lgdiced white onions

3 cloveminced garlic

2.14 ozounce cans organic tomato sauce

1.14 ozorganic fire roasted tomatoes

3 corganic vegetable broth
-
2 ccooked brown or green lentils
-
1 cfinely chopped baby bellas or other mushrooms of choice
-
1 dashred pepper
-
1 Tbspsauce only chipotle peppers in adobo sauce
-
3 Tbsptamari, liquid aminos, or soy sauce
-
1 Tbspvegan worcestershire sauce
-
2 Tbspitalian seasoning
-
2 tspgarlic powder
-
2whole bay leaves
-
1 1/2 cuncooked whole grain elbow macaroni or gluten-free elbow macaroni
How To Make vegan goulash

1In a large pot, saute onions and garlic over medium heat until translucent.

2Add red peppers.

3Cook about 4 minutes longer; stirring with onions and garlic.

4Add mushrooms and cooked lentils (if using a soy crumbles, add instead of the lentils and mushrooms)

5Stir and cook another 7 minutes.

6Add a little vegetable broth if it sticks, but the mixture from the mushrooms, onions, and peppers should provide ample moisture.

7Add tomato sauce, canned roasted diced tomatoes, vegetable broth.

8Add soy sauce, adobo sauce, garlic powder, the two bay leaves, and stir.

9Make sure the mixture is boiling BEFORE you add the noodles

10Add elbow macaroni and stir.

11Cover and reduce heat to simmer.

12Cook covered for 20 minutes.
