This was one of those meals that utilized things I had on hand. Any kind of rice could be used - make sure you adjust the amount of water to rice ratio according to your rice package. Also, I used fully cooked smoked sausage with cheddar cheese, so I did not bother to add extra cheese. Can use different sausage but if it is not pre-cooked, saute w/ veggies. You can spice it up a bit with some cayenne or hotter chili powder. I used medium heat ground chili from Hatch, NM as well as a little "Slap yo Mama" seasoning. No tomato sauce? No problem - use diced tomatoes or can of tomatoes with chili.

Ingredients For unstuffed green pepper skillet

  • 4
    sprays of olive oil or pan spray
  • 1 md
    green or red pepper, chopped
  • 1/2 c
    poblano pepper, chopped
  • 1/4 c
    onion, chopped
  • 1/2 c
    instant brown rice
  • 8 oz
    tomato sauce
  • 1 c
    water
  • 1/2 tsp
    paprika
  • 1/2 tsp
    garlic granules (or 1 garlic clove, minced)
  • 1/4 tsp
    salt, or to taste
  • 1/4 tsp
    chili powder
  • 2
    links smoked sausage, sliced or 1/2 pound lean ground beef
  • 1/4 c
    shredded cheese, optional

How To Make unstuffed green pepper skillet

  • 1
    Spray skillet with olive oil and heat to medium-hot. Add chopped onion and pepper. (Add ground beef if using that option) Stir until onion is slightly transparent and ground beef is no longer pink. Add minced garlic, if using, and cook for another minute.

    Add rice, water and tomato sauce. Bring to boil, then lower heat, cover and simmer until rice is done.

    Add spices and seasonings. Adjust to taste.

    If not using ground beef: Add sliced sausage. Stir together to heat thoroughly.

    Add a sprinkle of shredded cheese on each serving, if desired.
