This healthy dish is very versatile and easy to throw together. The meat can be changed to any kind of sausage and kale would work for the greens. I like it mild but it can be made with a kick depending on the type of Cajun seasoning you choose. You will be amazed at the beautiful presentation. The colors are so vibrant!

Ingredients For sweets & greens *all together now*

1 lbchicken mild italian sausage, casing removed

¼ stickghee (or butter)

½sweet onion, chopped
-
2-3cloves garlic, minced
-
1½ lbpre-cooked (or frozen) sweet potatoes, cubed

1-2 tspcajun seasoning of choice
-
1 bunchcollard greens
-
1-2 pinchseasoned pepper of choice (i like trader joes 21 salute)

1Brown the sausage in a skillet with melted butter. Add the garlic. Saute lightly and add the onion.

2When the onion is transparent, put the sweet potatoes in the pan with enough chicken broth to keep things from sticking. Put the lid on cook over medium heat a a few minutes.

3Stir the Penzey's Cajon Spice to taste. Layer the whole bunch of washed & chopped collard greens over the top and cover until the greens a slightly wilted. Gently stir the contents, add salt & Penzey's California Pepper to taste. Serve with pride.
