Ingredients For sweet & sour pineapple pork

  • SWEET & SOUR SAUCE
  • 1/4 c
    ketchup
  • 1 Tbsp
    hoisin sauce
  • 1 Tbsp
    fresh ginger, minced
  • 2 lg
    cloves garlic, pressed
  • 2 Tbsp
    brown sugar, such as demerara
  • 2 Tbsp
    apple cider vinegar
  • 2 Tbsp
    sweet chili sauce
  • 1 Tbsp
    chili sauce, such as heinz®
  • 1/2 Tbsp
    worcestershire sauce
  • 1 c
    unsweetened pineapple juice
  • 1 Tbsp
    cornstarch mixed with 1/3 cup cold water
  • STIR FRY
  • 1 lb
    pork, cut into 1-inch pieces
  • 1/8 tsp
    ground himalayan sea salt
  • freshly ground black pepper, to taste (i always use mixed peppercorns)
  • 1 Tbsp
    cornstarch
  • 1 Tbsp
    olive oil
  • 1/2 lg
    white onion, cut into 1-inch pieces
  • 1 lg
    carrot, peeled and sliced
  • 1 Tbsp
    sesame oil
  • 1/2 lg
    red pepper, cut into 1-inch pieces
  • 1/2 lg
    yellow pepper, cut into 1-inch pieces
  • 1/2 lg
    poblano pepper, cut into 1-inch pieces
  • 1 tsp
    fresh ginger, minced
  • 1 sm
    clove garlic, pressed
  • 2 c
    pineapple chunks
  • 1/2 c
    peanuts, unsalted (substitute cashews)
  • 1 lg
    green onion, cut into 1/2-inch pieces diagonally, for garnish
  • sesame seeds, for garnish

How To Make sweet & sour pineapple pork

    In a medium saucepan, combine all ingredients for the sweet & sour sauce except cornstarch; mix well. Bring to a boil and then add cornstarch mixture. Reduce heat to low and keep it warm.

    In a medium bowl, place pork and season with salt and pepper. Dredge with cornstarch using a sieve; set aside.

    In a wok over medium-high, heat olive oil. Add pork and sauté until almost half cooked. Add onions and sauté for 2 minutes. Add red, yellow and poblano peppers and sauté for another 2 minutes. Add carrots and sauté for 2 minutes. Add celery and sauté as well for 2 minutes. Add garlic and ginger; sauté for only 1 minute. Add pineapple chunks and sauté for 2 minutes. Add peanuts and sauté for 2 minutes.

    Pour sweet & sour sauce over the pork mixture and reduce heat to medium-low. Let simmer for 3-5 minutes. Serve over cooked rice and garnish with green onions & sesame seeds
