Ingredients For summer squash casserole

  • 2 lb
    yellow summer squash
  • 4 slice
    toasted wheat bread, cut into small pieces
  • 1/2 c
    chopped onion
  • 2 Tbsp
    margarine or butter
  • 2 Tbsp
    sugar
  • 1/2 c
    mayonnaise
  • 1
    beaten egg
  • 1/2 c
    sauteed red bell pepper
  • 1 c
    shredded mexican style shredded cheese

How To Make summer squash casserole

  • 1
    Cook squash and onion till tender, drain, and mash. Add margarine, sugar, mayo, beaten egg, red bell pepper, toast cut up in pieces, salt and pepper to taste, and half of the shredded cheese. Put into casserole dish and cover w/remaining cheese. Bake 350 for 30 min.
