Ingredients For summer squash casserole

2 lbyellow summer squash
-
4 slicetoasted wheat bread, cut into small pieces

1/2 cchopped onion
-
2 Tbspmargarine or butter
-
2 Tbspsugar
-
1/2 cmayonnaise
-
1beaten egg
-
1/2 csauteed red bell pepper
-
1 cshredded mexican style shredded cheese
How To Make summer squash casserole

1Cook squash and onion till tender, drain, and mash. Add margarine, sugar, mayo, beaten egg, red bell pepper, toast cut up in pieces, salt and pepper to taste, and half of the shredded cheese. Put into casserole dish and cover w/remaining cheese. Bake 350 for 30 min.
