Ingredients For summer goulash

  • 1/4 c
    vegetable oil
  • 1 Tbsp
    garlic,minched
  • 1/2 c
    onion,chopped
  • 1 lb
    ground chicken (season well with salt and pepper)
  • 2 c
    tomatoes,chopped (fresh or canned)
  • 2 c
    zucchini,sliced (do not peel)
  • 2 14 oz can
    chicken broth (reserve 1/2 cup)
  • 1 1/2 tsp
    oregano, dried
  • 2 Tbsp
    corn starch mixed with remaining 1/2 cup broth
  • pasta or rice (enough for 4)
  • parmesan cheese

How To Make summer goulash

  • 1
    Saute garlic and onion in oil until soft,add chicken and saute until browned.
  • 2
    Add tomatoes,zucchini,broth and oregano,simmer 10-15 minutes until tender.

    Add cornstarch/broth mixture.Heat through to thicken.
  • 4
    Serve over pasta or rice.Sprinkle with cheese.
