Ingredients For summer goulash

1/4 cvegetable oil

1 Tbspgarlic,minched

1/2 conion,chopped

1 lbground chicken (season well with salt and pepper)

2 ctomatoes,chopped (fresh or canned)

2 czucchini,sliced (do not peel)

2 14 oz canchicken broth (reserve 1/2 cup)

1 1/2 tsporegano, dried

2 Tbspcorn starch mixed with remaining 1/2 cup broth

pasta or rice (enough for 4)

parmesan cheese
How To Make summer goulash

1Saute garlic and onion in oil until soft,add chicken and saute until browned.

2Add tomatoes,zucchini,broth and oregano,simmer 10-15 minutes until tender.

3Add cornstarch/broth mixture.Heat through to thicken.

4Serve over pasta or rice.Sprinkle with cheese.
