1tomato, sliced

1 cmozzarella cheese

2 Tbspolive oil

1 tspgarlic powder

How To Make stuffed eggplant w/tomatoes & mozzarella

1Pre heat oven to 350 degrees.

2slice the eggplant into 3 parts, leaving attached to stem, apply salt on all the insides and set aside in a colander for 15 mins, to drain excess water.

3place on a baking sheet and fan out, place tomato slices equally in his slice as well as mozzarella cheese, then sprinkle with garlic powder, salt & pepper, drizzle olive oil

4bake 30 mins or till tender and cheese melted and bubbly.
