Ingredients For stewed lamb

1 1/2 lblamb, boneless cut into 2 inch cubes

1 1/2 Tbspolive oil

1/2 mdsweet onion, chopped

1/2head of garlic, unpeeled, seperated,

1bayleaf
-
1/2 Tbsppaprika, sweet mild

1/4 tspcinnamon
-
1/4 cred wine vinegar, good quality

1 tspsea salt
-
1/2 tspblack pepper, freshly ground

lamb stock/broth (as needed)
How To Make stewed lamb

1Heat the oil in a large pan. Add the meat pieces and cook till they are nicely browned.

2Then add the onions, and fry until they are golden.

3Add the garlic, bay leaf, paprika, cinnamon, vinegar, salt and pepper.

4Turn heat to low, cover the pan and let simmer for 2 hours, until tender .

5Check periodically to make sure it is not drying out...add stock/broth as necessary.
