After trying a few recipes for this, I have combined my favorites to come up with this. It combines all my favorite flavors in one. Give it a try, and let me know what you think!

Ingredients For spinach pie

  • 3 pkg
    frozen chopped spinach, thawed
  • 1 lb
    feta cheese
  • 8 oz
    ricotta cheese, low-fat
  • 8 oz
    cottage cheese, lowfat
  • 6
    green onions, chopped
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 4
    eggs
  • 1 c
    melted butter
  • 1/2 c
    fresh parsley, chopped
  • 1/2 c
    fresh dill, minced
  • 2 tsp
    fresh garlic, minced
  • 1 Tbsp
    lemon juice
  • 1 pkg
    phyllo dough

How To Make spinach pie

    Drain water from spinach, then mix all cheeses with spinach.

    Mix green onions and eggs together then add parsley, dill, lemon juice and garlic. Combine with spinach/cheese mixture. Set aside.

    Place 9 sheets of phyllo dough on bottom of 9x13 glass baking pan by alternating one sheet of dough, one brushed layer of melted butter, so on and so forth until 9 sheets are in pan.

    Place spinach mixture on top of phyllo dough in pan. Top the layer of spinach with 7 phyllo dough sheets; alternating dough, butter etc as done before. Top layer should be buttered.

    Bake for 30-35 minutes at 350degrees. Cut with hot, sharp knife. Enjoy!
