Ingredients For spinach enchiladas

  • 2 - 10 oz pkg
    chopped spinach
  • 1 pkg
    envelope dry onion soup mix
  • 12 oz
    shredded cheedar cheese
  • 12 oz
    monterey jack cheese shredded
  • 12
    flour tortillas
  • 2 c
    heavy cream

How To Make spinach enchiladas

  • 1
    make sure you sqeese or press allthe water out of the spinach Mix in a med bowl spinach, soup mix , half of cheedar and jack cheese Mix well Add 3 heaping tablespoons of mixture down the center of each torllia and roll up Put in a 9x13 baking dish that has been sprayed with cooking spray Pour cream over top and sprinkle remaining cheese over that Bake 20 minutes covered ina 350 oven After 20 minutes uncover and cook 15 minutes longer Reaiiy Good!!!
