Ingredients For spinach and chickpea

2 Tbspspanish olive oil, for frying

2 - 3 clovegarllc, minced

1/2 smonion, diced

1 bag10 ounces, baby spinach, washed dried

1 can18 - 19 ounces, chickpeas, rinsed, drained

1/4 tspsea salt
-
1/4 tspblack pepper
-
pinchcayenne pepper
-
1/2 tspsweet paprika
-
1 - 2 Tbspsherry vinegar

chopped cilantro, garnish
How To Make spinach and chickpea

1Put a pan on medium low heat, and add the olive oil. Once it is heated add the garlic and onion, cook for 5 minutes.

2Now, add the spinach, garbanzo beans, salt, cayenne pepper, black pepper and paprika; mixing well. Lightly mash the beans as the mixture cooks. (10 - 15 minutes) Add a little water if necessary.

3Once heated, remove the pan from heat, and add the vinegar and toss. Garnish with the cilantro and serve with a nice warm crusty bread.
