These are so delicious and I love the taste of the Poblano pepper. I used to make this recipe using bell pepper. Either way, it is delicious.

These stuffed poblano peppers aren't overly spicy. They are packed with flavor from the spicy sausage, salty Parmesan cheese, creamy cream cheese, and hearty brown rice. Wrapping them in bacon adds a lovely smokiness to the peppers. Simple to make, these could be served as a main or side dish.

Ingredients For spicy stuffed poblano peppers

  • 1 bag
    Success brown rice
  • 1/4 c
    Parmesan cheese, grated
  • 1 pkg
    cream cheese (8 oz)
  • 1 lb
    hot Italian sausage (bulk or casings removed). cooked
  • 4
    poblano peppers, sliced lengthwise and seeded
  • 8 slice
    bacon
  • pinch
    salt and pepper or to taste

How To Make spicy stuffed poblano peppers

  • Preparing rice.

    Prepare rice according to package directions.
  • Cheeses, rice, and cooked sausage added to a bowl.

    Preheat oven to 400 degrees. In a large bowl, combine the cheeses, rice, and cooked sausage. Mix well.
  • Pepper filled and wrapped in bacon.

    Stuff each pepper half with mixture and wrap with a slice of bacon.
  • Spicy Stuffed Poblano Peppers on a baking sheet.

    Place peppers on a large baking sheet. Bake 25 minutes.
