These are so delicious and I love the taste of the Poblano pepper. I used to make this recipe using bell pepper. Either way, it is delicious.

1/4 cParmesan cheese, grated

1 pkgcream cheese (8 oz)

1 lbhot Italian sausage (bulk or casings removed). cooked

4poblano peppers, sliced lengthwise and seeded

8 slicebacon

pinchsalt and pepper or to taste
How To Make spicy stuffed poblano peppers

1Prepare rice according to package directions.

2Preheat oven to 400 degrees. In a large bowl, combine the cheeses, rice, and cooked sausage. Mix well.

3Stuff each pepper half with mixture and wrap with a slice of bacon.

4Place peppers on a large baking sheet. Bake 25 minutes.

5Then place under broiler for about 5 minutes or until bacon is crisp.
