Ingredients For spam fried rice

  • 3 c
    leftover, cold white rice
  • 3 lg
    eggs, scrambled
  • 1 1/2 tsp
    cane sugar or brown sugar
  • 1 1/2 tsp
    dark soya sauce
  • 2
    green onions, white part only, finely chopped
  • 1 lg
    carrot, finely chopped
  • 1/4 lg
    sweet white onion, finely chopped
  • 1/2 Tbsp
    finely chopped, peeled, fresh ginger
  • 2 lg
    garlic cloves, finely chopped
  • vegetable oil
  • 1/2 can
    spam, cut into small cubes
  • 1 Tbsp
    mirin
  • 1/2 tsp
    sesame oil
  • 1 Tbsp
    dark soya sauce
  • 1/2 Tbsp
    rice wine vinegar
  • 1 c
    frozen, spring peas
  • 3
    green onions, sliced thin
  • 1 c
    fresh pineapple, coarsely chopped
  • season with salt and black pepper (optional)
  • 1/4 c
    chopped macadamia nut (garnish)
  • 1/8 c
    toasted coconut, shredded (garnish)

How To Make spam fried rice

  • 1
    Remove leftover rice from fridge and set aside until needed.

    In a small bowl lightly scramble the egg, sugar, soya sauce and green onion. In a pan add some oil or butter and softly scramble the eggs, then remove from heat and set aside until needed.

    Brown the spam in a little oil and then remove from heat, set aside until needed.

    In a large pan, saute the carrot, onion, ginger and garlic until soft and tender.

    Now add the sesame oil, rice and peas, mix well.

    Mix in the mirin, rice vinegar and soy sauce, mix well and add the spam, egg, pineapple and green onion. Taste and season with sea salt and freshly ground black pepper if necessary.

    Garnish with macadamia nuts and or toasted coconut and serve immediately. .
