When I was growing up we didn't eat meat on Fridays, my mother and grandmother use to make this alot for Friday dinners.

Ingredients For spaghetti sauce with eggs

1/4 colive oil

1 csweet onion diced
-
2-4 clovegarlic minced
-
1 cchicken broth
-
1 Tbspvinegar
-
8eggs
-
1 qttomato
-
1 cantomatoe paste (small can)

1/2 cpecorino romano cheese
-
3 Tbspfresh basil chopped

salt & pepper to taste
How To Make spaghetti sauce with eggs

1Saute onion in olive oil until transparent, add garlic and saute 1-2 minutes. Add chicken broth & vinegar, bring to a simmer. Drop eggs in 1 at a time, cover and simmer until yolks of eggs are hard set.

2In a blender or food processer add tomatoes, paste,cheese, basil, salt and pepper. Pulse just enough to smooth out tomatoes.

3Pour mixture over eggs and simmer for 15-20 minutes over med low heat.

4Serve as a side dish or over your favorite pasta.
