Freekeh is a delicious grain that has so much nutritional valve that it is overtaking quinoa. It has protein, magnesium, B vitamins, fiber, minerals, iron antitoxins and much more. I think it tastes better too. Has a nutty flavor and goes great in any recipe that calls for a grain, like rice, quinoa, barley etc... it is a great vegan dish or you can add an animal protein if you want

Ingredients For southwestern freekeh platter w cilantro crema

6 cfreekah cooked per package directions

3 canblack beans drained and rinsed

1/2head red cabbage chopped

2 lgjalapenos seeded and sliced

1 ccarrots cut into matchsticks

2 lgtomatoes chopped

1 mdred onion sliced

1 chemp seeds
-
2 smzucchini spiralized
- FOR CREMA
-
1 lgjalapeno seeded
-
4 clovegarlic
-
1 ccilantro leaves
-
zest and juice of 1 small lime
-
2 smavocados
-
2 cmexican crema
-
1 tspsalt
How To Make southwestern freekeh platter w cilantro crema

1For the crema add the jalapeno, garlic, avocados, and cilantro in a food processor. Process until well mixed. Add the crema and salt and process until smooth. Set aside in fridge.

2Cook the Freekeh and spread on bottom of a large platter or into individual bowls. Top with black beans, Red cabbage, carrots, red onion, tomatoes hemp seeds and spiralized zucchini.

3Drizzle Crema over top when serving.
