This is a delicious and healthy recipe. I have been doing the 17 day diet and this is a great dish, full of flavor and allowed on the diet. Hope you all enjoy this as much as my family. They inhale it!

Ingredients For shrimp scampi over quinoa pilaf

  • 1 lb
    shrimp
  • 1/4 c
    olive oil
  • 1/4 c
    margarine
  • 2 clove
    garlic
  • 1/4 tsp
    red pepper flakes
  • 2 Tbsp
    dry white wine
  • 2 Tbsp
    lemon juice
  • 1/4 tsp
    salt
  • 1/8 tsp
    pepper
  • 3 Tbsp
    fresh parsley, chopped or 1 1/4 tsp dried
  • 3-4 c
    quinoa, cooked
  • 1 1/2 can
    carrots, chopped
  • 1/2 c
    onion,chopped
  • 1/4 c
    celery, chopped
  • 1/4 c
    margarine
  • 2 clove
    garlic, crushed
  • 1 c
    almonds (optional)
  • 1/4 tsp
    oregano, dried
  • salt to taste

How To Make shrimp scampi over quinoa pilaf

  • 1
    Scampi: Heat oil and 2 Tbsp of margarine in large skillet. Add garlic and pepper flakes: cook 1 minute. add shrimp; cook 6 minutes. Remove shrimp with slotted spoon to plate; keep warm. Reserve the oil from the skillet.

    Cook Quinoa according to package directions. I used 1 1/2 C quinoa and 3 cups water. This makes the perfect amount.

    Saute vegetables in oil until crisp/tender; stir in oregano. Add the cooked quinoa to the vegetable in the skillet, mix well. Salt to taste. Add almonds (optional). Remove from skillet.

    Add wine, lemon juice, margarine, salt, pepper and parsley to skillet. Heat for 1 minute. Add Quinoa Pilaf to skillet and mix well. Put Quinoa pilaf on plate, top with the Shrimp scampi and drizzle with the reserved oil. Enjoy!
