My son Sean has recently declared himself a vegetarian and has shared this recipe to make as it is his favorite.

Ingredients For sean's favorite vegetarian chili

1 Tbspolive oil

1 mdonion, chopped
-
2bay leaves
-
1 tspground cumin
-
2 Tbspfresh oregano, chopped

1 Tbspsalt

1 stalkcelery, chopped
-
3 clovegarlic, chopped

2 can(4 oz) chopped green chile peppers, drained
-
2 pkg16 oz vegetarian burger crumbles
-
3 can28 oz whole peeled tomatoes, crushed
-
1/4 cchili powder
-
1 Tbspground black pepper
-
1 can(15 oz) kidney beans, drained
-
1 can(15oz) garbanzo beans,drained
-
1 can(15 oz) black beans, drained

2green bell peppers, chopped
How To Make sean's favorite vegetarian chili

1In a large pot, add the first 6 ingredients. Cook until the onion is tender, then mix in the celery, green peppers, garlic and chili peppers.

2In a separate frying pan, cook the vegetarian crumbles until cooked through. Add this to the first pot.

3Reduce heat to low. Season with the chili powder and pepper. Stir in all of the different the beans and bring to a boil.

4Reduce heat to a simmer and simmer for 45 minutes.
