This recipe was given to me by a very dear friend. She notes that instead of the bottled dressing, she likes to mix mayonnaise and sweet chili sauce to use instead.

Ingredients For seafood louis rolls

1/2 cbottled thousand island or russian dressing

1 Tbspfresh lemon juice
-
1/8 tspeach curry, salt, pepper

2 ccooked seafood: lobster, shrimp, crab or combination

1/4 ccelery, finely diced

1 Tbspfresh chives, diced

4split and toasted sandwich rolls

2 Tbspbutter or margarine, softened

lettuce leaves
How To Make seafood louis rolls

1Whisk together dressing, lemon juice, curry, salt and pepper. Add seafood, celery, and chives. Combine well.

2Spread toasted buns with butter. Line with lettuce and fill with salad.

3NOTE: Chopped hard-cooked eggs can be added to the salad to make it a more authentic "Louis."
