sausage and cauliflower casserole

I am always trying to get my youngest daughter to eat vegetables. So when my friend gave me this recipe, I put it to the test. I made it and after she took a few bites commented "Mom, this is really good. Whats in it?" I told her I would tell her after dinner. When I told her she not only has asked for it again on numerous occasions, but she likes to tell everyone how she is eating her vegetables.

Ingredients For sausage and cauliflower casserole

  • 1.5-2.25 lb
    bulk pork sausage
  • 1
    onion chopped
  • 2 clove
    garlic, minced
  • 6 c
    cauliflower, chopped
  • 6
    eggs, beaten
  • 1 c
    parmesan cheese

How To Make sausage and cauliflower casserole

    In a large skillet over med-hi heat, cook sausage until done, 5-7 minutes. Remove sausage to bowl; drain all but 1 Tbl fat fro skillet.

    Add onion and garlic to skillet; cook 2 minutes. Add cauliflower; cook 2 more minutes.

    Remove to large bowl; add eggs, Parmesan cheese and sausage. Still to combine.

    Spoon into 9x13 baking dish; bake 1 hour or until brown at 350
