Ingredients For roasted cherry tomato & garlic pierogis

  • 1 bag
    Holy Pierogi!™
  • 1 c
    cherry tomatoes
  • 1 lg
    garlic clove, thinly sliced
  • 1 Tbsp
    capers
  • 1 Tbsp
    olive oil
  • salt and fresh ground pepper
  • chives or basil
  • feta, goat, or Parmesan cheese

How To Make roasted cherry tomato & garlic pierogis

    Preheat oven to 450 degrees F. Line a baking sheet with parchment paper.

    Bring a large pot of water to a boil. Add pierogis and cook, stirring occasionally, for 6 minutes. Add to a large mixing bowl and set aside.

    In a bowl, add the tomatoes, garlic, and capers and toss with olive oil. Season with salt and pepper.

    Place on lined baking sheet and roast for 8-10 mins until tomatoes have softened and released their juices.

    Toss tomato mixture with pierogis and serve warm.

    Top with herbs and cheese.
