This is a recipe I found in an old Prevention's cookbook. I have been collecting stuffed pepper recipes and decided to share this one.

Ingredients For rice and feta stuffed peppers

4 mdred peppers
-
2 1/2 ccooked rice

4 ozfeta cheese, crumbled

1/2 cchopped green onions
-
1/4 cpimento stuffed olives
-
1/4 cdefatted low sodium chicken stock
-
3 Tbspalmonds, slivered
-
1/2 tspcumin
-
1/8 tspground saffron
How To Make rice and feta stuffed peppers

1Bring a large saucepan of water to a boil. Slice off stem ends of peppers and remove seeds and membranes.

2Place peppers in boiling water for 2 min, remove and rinse with very cold water. Drain well and place in an 8 x 8 baking dish.

3Combine rice, cheese, onions, olives, stock, almonds, cumin and saffron. Spoon into peppers. Broil 3" to 4" from heating element for 10 - 12 min.
