I've been making this "recipe" for years but never wrote it down because like most cooks, I don't measure everything and never really considered it to be a recipe.

Ingredients For red beans, sausage & rice my way

2 cancreamy red beans, such as blue runner brand

2 canred beans, with liquid (i prefer van camp's new orleans style)

2 canro-tel tomatoes

1 Tbspmore or less, dried oregano

1 Tbspmore or less, dried basil
-
2 Tbspmore or less, dried parsley
-
1-3/4 lbsmoked sausage
-
1 lgonion, chopped
-
1 lgbell pepper, chopped
-
1 Tbspchopped garlic
-
3bay leaves
How To Make red beans, sausage & rice my way

1Cut smoked sausage into coin-size pieces and brown in a 5-quart Dutch oven with a little canola oil added.

2Remove sausage and drain on paper towels.

3Discard all but about 2 tbs. grease and add onion, pepper & onions. Saute' until soft.

4Return sausage to Dutch oven and add remaining ingredients. Simmer on medium heat for about an hour, stirring frequently to make sure it doesn't stick.

5Serve over hot rice (we prefer brown rice)with sides of green salad and cornbread or French bread.
