Ingredients For ratatouille

  • 1
    onion, diced
  • 2 Tbsp
    olive oil
  • 3
    cloves garlic, minced
  • 28 oz
    can stewed tomatoes
  • 1
    egglant, peeled and cubed
  • 1
    zucchini, halved lengthwise and thinly sliced
  • 1
    yellow squash, halved lengthwise, sliced thinly
  • 1
    green pepper, diced
  • 1 Tbsp
    fresh thyme, chopped
  • 1 Tbsp
    fresh oregano, chopped
  • salt and pepper to taste

How To Make ratatouille

  • 1
    In a skillet over medium heat, saute onion in oil until soft. Add garlic; saute for one minutes and remove from heat. Combine undrained tomatoes and remaining ingredients in a slow cooker. Add onion mixture; stir gently. Cover and cook on low setting for 5-6 hours.
