Ingredients For ratatouille

1onion, diced
-
2 Tbspolive oil
-
3cloves garlic, minced
-
28 ozcan stewed tomatoes
-
1egglant, peeled and cubed
-
1zucchini, halved lengthwise and thinly sliced

1yellow squash, halved lengthwise, sliced thinly

1green pepper, diced
-
1 Tbspfresh thyme, chopped

1 Tbspfresh oregano, chopped

salt and pepper to taste
How To Make ratatouille

1In a skillet over medium heat, saute onion in oil until soft. Add garlic; saute for one minutes and remove from heat. Combine undrained tomatoes and remaining ingredients in a slow cooker. Add onion mixture; stir gently. Cover and cook on low setting for 5-6 hours.
