This was one of my late husband's favorite dishes. We would sit down at the dinner table with our son to enjoy our meal and catch up on the day's events. I adapted this recipe from the original that came to me in an issue of Taste of Home magazine more than 20 years ago. It's easily customizable. You can adapt it to suit your own family's tastes. I hope you will enjoy this dish as much as our family. You'll certainly have more time.

Ingredients For quick & colorful kielbasa skillet dinner

  • 1 can
    campbell's condensed cream of onion soup, undiluted
  • 1 1/2 c
    water
  • 1 Tbsp
    butter
  • 1 lb
    kielbasa sausage, sliced fairly thin
  • 3/4 c
    minute rice
  • 1 can
    11 oz. le sueur shoepeg sweet corn, drained
  • 1 can
    15 oz. le sueur peas with mushrooms and pearl onions, drained
  • 1 1/2 c
    sharp cheddar cheese, shredded

  • Soup, water and butter.

    In a large skillet, combine soup, water and butter; bring to a boil.
  • Simmering.

    Add kielbasa and Minute Rice. Reduce heat and simmer, covered, 12-15 minutes or until rice is almost tender.

    Stir in Le Sueur peas and corn; heat through. Add salt and pepper to taste.
  • You're ready to serve.

    Sprinkle with shredded cheese; cover and let stand until cheese is melted.
  • These are ingredients I chose.

    Substitution Ideas: Use Campbell's Cream of Celery, Cream of Mushroom or Cheddar Cheese soup. Use one can of Campbell's Beef Consommé soup plus enough water to equal 1 & 1/2 cups. Use beef or turkey smoked sausage. Add additional sliced and drained mushrooms, carrots, green beans or other type canned/cooked beans.
