I found this recipe one day on Taste of Home and decided to give it a try. My husband loved it and he's not even fond of Kielbasa! Now I make it every so often on a weeknight because it's quick and easy to serve!

1 lbred potatoes, cubed

3 Tbspwater

3/4 lbkielbasa or polish sausage, cut into 1/4-inch slices

1/2 cchopped onion

1 Tbspolive oil

2 Tbspbrown sugar
-
2 Tbspcider vinegar
-
1 Tbspdijon mustard
-
1/2 tspdried thyme
-
1/4 tspblack pepper
-
4 cbaby spinach
-
5bacon strips, cooked & crumbled
How To Make potato kielbasa skillet

1Place potatoes and water in a microwave-safe dish. Cover and microwave on high for 4 minutes or until tender; drain.

2In a large skillet, saute kielbasa and onion in oil until onion is tender. Add potatoes; saute 3-5 minutes longer or until kielbasa and potatoes are lightly browned.

3Combine the brown sugar, vinegar, mustard, thyme and pepper; stir into skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through. Add spinach and bacon; cook and stir until spinach is wilted. Yield: 4 servings. 13 points per serving
