How To Make poodle's southwestern roll-ups

    POODLE'S SOUTHWESTERN ROLL-UPS 1 package of Southwestern style vegetables (or a mixture of red & green peppers, onions, corn, black beans) Package of soy "beef" strips, or leftover cooked beef - optional 1 can of black beans and ¾ c more frozen corn, (if you need to bulk it up to serve more) Chopped tomatoes, black olive slices, green onions (and if desired some shredded angel hair cabbage) BBQ sauce Light Cream cheese, cheddar cheese, whole wheat flour tortillas, (mayonnaise - optional) Cook onion and peppers in a skillet with olive oil until tender. Add salt and pepper to taste. Add soy strips if they're desired and cook through. Add corn and black beans, stir gently. Add 3T BBQ sauce. Remove from heat and add the tomatoes, olives, green onions and cabbage. Spread tortilla with cream cheese, put the filling down the center, top with a little cheddar and roll up. If you would rather serve this cold, a little mayonnaise can be stirred in once the mixture is chilled to make it more salad like. I omit the soy strips when I serve it cold.
