pineapple over rice with versatile sauce

This is quite a flexible recipe. I have done this with chicken and plan to try with other meats: pork or swordfish. It might be interesting to use pasta or couscous. Experiment on your own and let me know what you think.

How To Make pineapple over rice with versatile sauce
-
1In a saucepan, combine brown sugar, red pepper flakes, pineapple juice, water or broth, soy sauce, and green pepper.
-
2Bring to a boil. Add cornstarch gently to thicken, stirring. When it is desired thickness (I like it about the consistency of honey), set aside.
-
3Prepare (heat if necessary) a bed of rice on each plate.
-
4Place pineapple rings on the rice. (I use 3 rings, but whatever you decide looks nice).
-
5Liberally spoon the sauce over rings and rice.
-
6Put remaining sauce in a pretty little serving bowl. Serve. Enjoy.
