An awesome meal I threw together with what I had on hand, and has already been requested again. The saltiness of the sausage and the natural sweetness of the squash, onion and garlic went so well together. Easy, just some choppingof veggies and meat. Enjoy! My family tested and highly approved...

Ingredients For ~ perfectly roasted sausage & veggies ~

1 3/4 lbsmoked sausage or kielbasa sliced into 1 inch chunks

4med russet potatoes, peeled and cubed about 3/4 inch

1 smbutternut squash, peeled and cubed 3/4 inch size

1 lgsweet onion, cut in half and cut into several 1/2 inch wedges

8 clovegarlic, smashed

Oliveoil for tossing with veggies

1 1/2 Tbsppaprika or more to taste

Koshersalt to taste - i sprinkled evenly

Garlicpowder to taste - i used about 1 1/2 tbsp

1 1/2 tspeach - dried rosemary & dried thyme

Blackpepper to taste

Extraolive oil for drizzling
How To Make ~ perfectly roasted sausage & veggies ~

1Preheat oven to 400 degree F. In a large bowl, toss the veggies, meat, onion and garlic together. Sprinkle with seasonings and toss with 3 - 4 tablespoons olive oil until all is coated.

2On the largest sheet pan you have with sides, cover with foil. Spray with nonstick cooking spray. Spread the mixture evenly out onto pan in single layer if possible. Drizzle lightly with additional oil.

3I baked mine in my convection oven and was done in 1 hour 15 minutes. I'm guessing it would be 1 hour and 30 - 45 minutes regular oven, turning once or twice between baking.

4Taste and adjust seasoning if needed. Plate and enjoy!
