my gyro
My husband is a very picky eater. He really liked the gyros, and he especially liked the tzadziki sauce. Don't be afraid to make extra sauce. It is great as a dip for vegetables. I made this with beef, but I want to make sure to use lamb next time. If you are a vegetarian, try topping your pita with a variety of vegetables (lettuce, tomato, cucumbers, zucchini, onions, etc) and top with tzadziki sauce.

Ingredients For my gyro

6 mdwhole wheat pitas

1 smzucchini

1 lbground beef or lamb

1/4 ccrumbled feta

2 Tbspfresh mint, chopped

2spring onions

1 tspminced garlic

salt and peppeer to taste
- TZADZIKI SAUCE

7-8 ozgreek yogurt
-
1 1/2 Tbspfresh mint, chopped

1 mdlemon, juiced
-
1/2 tspminced garlic

salt and pepper, to taste
- ADD ONS:

lettuce leaves
-
tomato
-
onion, thin slices
How To Make my gyro

1Heat broiler
-
2Process zucchini to medium grated consistency. Put into mixing bowl

3Add ground beef (or lamb) to zucchini. Mix well.

4Add Feta, mint, onion, and garlic. Stir into meat mixture. Salt and Pepper to taste.

5Shape into average sized meatballs. You will yield about 16 meatballs (about 4 per pita)

6Broil to medium-well. (no pink). about 10 minutes.

7For sauce, blend together yogurt, mint, lemon juice, and garlic. Salt and Pepper to taste.

8Warm pitas (wrap in foil and heat in oven, or quick heat in microwave 20 seconds each).

9Assemble, start with desired vegetables (lettuce, tomato, onion), top with 3-4 meatballs, desired amount of sauce, and feta.
