Ingredients For moroccan stew

1 1/2 cwater or vegetable stock

1 lgyellow onions (finely chopped)

2 lgred bell peppers (seeded and chopped)

2-3garlic cloves,minced

2 tsplight brown sugar
-
1 tspground coriander
-
1/2 tspground cinnamon
-
1/2 tspground cumin
-
1/4 tspground cayenne
-
1 tspgrated or minced fresh ginger

2medium sized sweet potatoes cut into 1 cm cubes

1 candiced tomatoes,undrained
-
2 ccooked chickpeas,drained and rinsed

salt
-
1 tsppepper
-
1/4 cfrozen peas
How To Make moroccan stew

1heat 3 tablespoons water in a pot over medium heat. add onions, bell peppers and garlic and cook until the onions are translucent.

2stir in salt,pepper, brown sugar,coriander,cinnamon,cumin,cayenne,ginger,a tablespoon of water(so that the spices dont burn) and cook for 60 secs,stirring constantly. add sweet potatoes and combine well.

3add the tomatoes,remaining water,frozen peas and chickpeas. bring to boil,then simmer until the sweet potatoes are tender.

4serve with quinoa or couscous.
