I've frozen these meatballs very successfully, and the recipe is easily scalable. From frozen, I've made meatball subs, meatballs and gravy, spaghetti and meatballs, all easy weeknight meals.

Ingredients For mom's easy meatballs

  • 2 lb
    ground beef
  • 2
    eggs
  • 1 c
    water
  • 1 pkg
    6-oz. stuffing mix

How To Make mom's easy meatballs

    Preheat oven to 400°. Prepare large cookie sheets by lining with aluminum foil that you've sprayed with cooking spray.

    Mix all ingredients together. Shape into size meatballs you wish - 1" is typical. Place on cookie sheets.

    Cook for 16 minutes. Remove from sheets when cool.
